  • Vanilla Extract. Pure vanilla is best.
  • Overripe Bananas. For best results, use bananas that are overripe.

Step By Step Instructions

  • Step 1. Preheat the oven and prepare the baking dish. Set the oven to 350 degrees and spray an 8X8 baking dish with cooking spray.  Then set aside the prepared pan.

Step 2. Get out a large bowl. Whisk together the flour, sugar, baking soda, baking powder and salt.  Then set aside.

Step 3. Next, make 3 holes into the dry ingredients.

Step 4. Pour the vanilla extract into one, the white vinegar into one and the vegetable oil into the 3rd one.

Step 5. Next, add the mashed bananas and water on top of flour mixture. Then mix flour and wet ingredients until thoroughly combined.

Step 6. Carefully pour batter into the prepared cake pan.

Cake baked and cooling. Icing spread on baking pan.

Step 7. Bake the cake for 35-40 minutes in a preheated oven until a toothpick inserted into the center of the batter comes out clean.  Let the cake cool completely. The cake is delicious as is or you can top it frosting.

If you do not top the cake with frosting, the leftovers can be stored at room temperature in an airtight container for up to 3 days.  If you frost cake, refrigerate the leftovers in an airtight container. It will last up to 5 days in the fridge.

You can also use foil or plastic wrap to cover the baking dish with. If placing in the freezer for extending storage, make sure to wrap tightly before storing.
