This recipe is one of my favorite desserts for the holidays. It’s an easy baked recipe made with fresh sweet potatoes and it’s always a crowd favorite.

Sweet Potato Pie Bars combine a tender, buttery crust with a creamy, spiced sweet potato layer. They’re easy to slice and serve, making them a simple and satisfying dessert for any occasion.

Crust

  • Graham Crackers. I used sheets and crushed them into crumbs. You can also buy the crumbs ready made at the grocery store.
  • Brown Sugar. Try The Best Brown Sugar Substitutes.

Filling

Topping

  • Mini Marshmallows. This size is best in the recipe. If you only have regular size, you can cut them into smaller pieces.

Variations

  • Change the Crust – Feel free to change the crust to what you prefer. You can also use a store-bought crust.
  • Topping – We love the marshmallow topping, but you can also use a whipped cream topping.
  • Sweet Potato Filling – The ingredients for this recipe are simple. But you can add in ingredients if you prefer. Maple syrup is a great addition.
  • Nuts. Mix in pecans or walnuts into the sweet potato filling.

How To Make Sweet Potato Pie Bars

  • Step 1 – Bake Sweet Potatoes – Poke the sweet potatoes with a fork and wrap in foil. Bake in a preheated oven at 400 degrees Fahrenheit for 45-50 minutes until the potatoes are fork tender. Allow to cool.

Step 2. Crush the graham crackers in a food processor to make graham cracker crumbs. Then mix together the crust ingredients in a medium size mixing bowl.

Step 3. Then press this mixture into the bottom of the 8X8 baking pan. Bake the crust.

Step 4. While the crust is baking, prepare the filling mixture.  Remove the foil and the skin from the sweet potatoes. Place the sweet potatoes in a large bowl and mash. Add in all the other filling ingredients including spices to the bowl.  Mix the batter until thoroughly combined.

Step 5. Pour the filling over the crust and bake. Cook until a toothpick inserted into the center comes out clean.

Step 6. Let the bars cool completely at room temperature. Then chill in the refrigerator for at least 4 hours. When serving, top with the mini marshmallows and broil to brown the marshmallows slightly.

Pro Tips

  • Prepare the Sweet Potatoes Ahead of Time – Bake or cook your sweet potatoes in advance to save time. Leftover cooked sweet potatoes work well too. Make sure they are completely cooled before mixing with the other ingredients to ensure a smooth, creamy filling.
  • Make the Graham Cracker Crust – Crush graham crackers using a food processor or by placing them in a zip-top bag and using a rolling pin. Mix thoroughly with melted butter to create a uniform, buttery crust that holds together well.
  • Cool the Bars Properly – After baking, allow the bars to cool completely. Chilling them in the refrigerator for about 4 hours helps them set properly and makes cutting easier.
  • Add the Topping Just Before Serving – When ready to serve, top with marshmallows and lightly toast them for added flavor and a visually appealing finish. This step enhances both taste and texture.

Frequently Asked Questions

Can I Use Canned Sweet Potatoes?

We recommend using fresh sweet potatoes to make this recipe. We have not tried it with canned sweet potatoes. But the results may not be the same.

The texture may be runny and not stand up as well.

Can I Prepare Ahead of time?

Yes, this is the perfect dessert to prepare ahead of time. I like to prepare the night before and allow to chill overnight.

Then when you are about to serve it, add your marshmallow topping and broil. Then it is ready to serve.

How to Store Leftovers?

Refrigerate the leftovers in an airtight container for up to 1 week. You can also freeze the bars. Wrap individual bars tightly in plastic wrap and place in a freezer-safe container or bag. Instructions

  • Poke the sweet potatoes with a fork and wrap in foil. Bake at 400 degrees Fahrenheit for 45-50 minutes until the potatoes are soft. You may need more cook time depending on the size of your sweet potatoes.
  • Allow the sweet potatoes to cool. 
  • Reduce the oven temperature down to 350 degrees Fahrenheit.  
  • Line an 8X8 baking dish with parchment paper.  
  • Crush up the graham crackers in a food processor to make graham cracker crumbs.
  • Mix together the crust ingredients in a medium size mixing bowl.  Then press this mixture into the bottom of the 8X8 baking pan.
  • Bake the crust for 15 minutes to 25 minutes.  
  • While the crust is baking, prepare the filling mixture.  Remove the foil and the skin from the sweet potatoes.
  • Place the sweet potatoes in a large bowl. Add in all the other filling ingredients to the bowl.  Mix until thoroughly combined.
  • Pour the filling over the crust and bake for 35 to 45 minutes. Cook until a toothpick inserted into the center comes out clean. 
  • Let the bars cool completely at room temperature. Then chill in the refrigerator for at least 4 hours or until ready to serve. 
  • When serving, top with the mini marshmallows and broil for 2-3 minutes to brown the marshmallows slightly. 
  • Slice into squares and the bars are ready to serve and enjoy.
