Ingredients

  • 2 large ripe bananas
  • 1 cup rolled oats
  • 1/3 cup chocolate chips

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • Place 1 cup rolled oats in a food processor and pulse for 1 to 2 seconds. Do not process the oats into a fine flour. The oats should remain slightly coarse to help give the cookies texture and hold them together.
  • Add 2 large ripe bananas to a large mixing bowl and mash until mostly smooth.
  • Stir the pulsed oats and 1/3 cup chocolate chips into the mashed bananas until thoroughly combined.
  • Scoop the mixture onto the prepared baking sheet, dividing it into 6 portions. Use your fingers or the back of a spoon to gently shape each portion into a cookie.
  • Bake for 12 to 15 minutes, or until the cookies are lightly golden around the edges.
  • Allow the cookies to cool on the baking sheet for 5 minutes before serving.
