- 1 cup butter softened at room temperature
- 1½ cups light brown sugar
- 2 eggs
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 Tbsp Corn Starch
- ½ teaspoon salt
- 1/2 tsp ground cinnamon
- 2 tsp Vanilla Extract
- 1/4 cup Granulated Sugar for topping

Preheat oven to 375 degrees F.
In a medium bowl, cream together the shortening and brown sugar with a hand held mixture or stand up mixture. Add in the eggs and vanilla extract. Mix until thoroughly combined and smooth.
Combe the flour, baking soda, corn starch, cinnamon and salt together in a separate bowl.
Stir the dry ingredients into the wet ingredients by hand.
Roll dough into one inch sized balls, then roll the balls into the granulated sugar.
Place them onto a cookie sheet and bake 10-12 minutes.
Let the cookies set for 5 minutes on the pan and then transfer them to a wire rack to cool completely. Enjoy!
