Fudgy brownies topped with peanut butter balls make the best Buckeye brownie bites. The entire treat is drizzled with chocolate for an irresistible dessert.

3/4cupPowdered Sugar
3/4cupCreamy Peanut Butter
1/2cupSemi-Sweet Chocolate Chips
1tspCoconut Oil or Vegetable Oil

Preheat the oven to 350 degrees F and generously spray 2 mini-muffin pan with non-stick cooking spray.
In a mix bowl, stir together the peanut butter and powdered sugar until well combined. Form this mixture into approximately 1 tsp size balls (approximately 36) and set them aside.
Prepare the brownie mix based on the package instructions and pour the batter into the mini-muffin cups in the pan until they are approximately 3/4 full (approximately 1 Tbsp of the batter). Should make approximately 36 brownie bites.
Bake for 18-21 minutes or until a toothpick inserted into one of the brownie bites comes out clean. Remove from the oven and immediately press a peanut butter balls into each brownie bite. Then allow them to cool for 5 minutes in the pan and then carefully remove the brownie bites from the pan to a wire rack to cool completely.
Then place the semi-sweet chocolate chips and oil of your choice in a microwave safe bowl. Heat in 20 second intervals, stirring after each interval until the chocolate is fully melted. Drizzle this glaze over the brownie bites and allow the glaze to cool and fully set.
Then the buckeye bites are ready to serve and enjoy!
