Carrot Cake Dip

Ingredients

  • 16 ounces cream cheese softened to room temperature
  • 1 teaspoon Vanilla Extract
  • 3/4 cup powdered sugar
  • 2 Tablespoons Melted Butter
  • 1/4 cup brown sugar
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • ¼ teaspoon Ground Ginger
  • teaspoon Salt
  • 2 Carrots peeled and grated
  • Optional chopped walnut, pecans or almonds

Instructions

  • Peel and grate 2 carrots, then press with paper towels to remove excess moisture.
  • In a large bowl, beat together 16 oz softened cream cheese, 2 tbsp melted butter, ¾ cup powdered sugar, ¼ cup brown sugar, 1 tsp vanilla extract, ¾ tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ground ginger, and ⅛ tsp salt until smooth and creamy.
  • Stir in the grated carrots and, if desired, add chopped walnuts, pecans, or almonds.
  • Serve with graham crackers, cookies, or fruit and enjoy!

Notes

It’s important to let the cream cheese soften at room temperature so that it mixes well with the other ingredients. 
Refrigerate any leftovers in an airtight container for up to 3-4 days.
