- 16 ounces cream cheese softened to room temperature
- 1 teaspoon Vanilla Extract
- 3/4 cup powdered sugar
- 2 Tablespoons Melted Butter
- 1/4 cup brown sugar
- 3/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- ¼ teaspoon Ground Ginger
- ⅛ teaspoon Salt
- 2 Carrots peeled and grated
- Optional chopped walnut, pecans or almonds

Peel and grate 2 carrots, then press with paper towels to remove excess moisture.
In a large bowl, beat together 16 oz softened cream cheese, 2 tbsp melted butter, ¾ cup powdered sugar, ¼ cup brown sugar, 1 tsp vanilla extract, ¾ tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ground ginger, and ⅛ tsp salt until smooth and creamy.
Stir in the grated carrots and, if desired, add chopped walnuts, pecans, or almonds.
