Christmas Cowboy Cookies

Ingredients

  • 2 cups All Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Ground Cinnamon
  • 1/2 teaspoon Salt
  • 1 cup Unsalted Butter softened
  • 3/4 cup Granulated Sugar
  • 3/4 cup Brown Sugar
  • 2 Large Eggs room temperature
  • 2 teaspoons Vanilla Extract
  • 1 1/2 cups Old-Fashioned Oats
  • 3/4 cup Semi-Sweet Chocolate Chips
  • 3/4 cup White Chocolate Chips
  • 3/4 cup Chopped Pecans
  • 3/4 cup Sweetened Coconut Flakes
  • 1 1/2 cups Red and Green M&Ms

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and line 2 baking sheets with parchment paper.
  • In a medium size mixing bowl, whisk together the flour, baking soda, powder powder, ground cinnamon and salt.  Then set aside.
  • Using a mixer, cream together the butter with the sugar and brown sugar until light and fluffy.  Then add in the eggs and vanilla extract and mix until combined.
  • Gradually add in the flour mixture, mixing after each addition, until just combined. Be careful not to over mix.
  • Stir in the oats, chocolate chips, pecans, coconut and half of the M&M. Use a cookie scoop to drop balls of the cookie dough onto the baking sheets.
  • Press the remaining M&M into the tops of the cookies.
  • Bake for 11-13 minutes until the edges of the cookies are set and slightly browned.
  • Let the cookies sit on the baking sheets for 5 minutes, then move them to wire racks to cool completely.

Notes

Store the leftover cookies at room temperature in an airtight container or bag. Store the cookies with a slice of bread to keep them soft.
