Preheat the oven to 350°F. Lightly grease a 13×9-inch baking dish with nonstick cooking spray.
Peel and core the 2 Granny Smith apples. Cut each apple into 8 equal wedges, for a total of 16 apple slices.
Unroll the 2 cans of crescent roll dough and separate the dough into 16 triangles.
Place one apple slice on the wide end of each crescent triangle. Roll the dough around the apple, starting at the wide end and rolling toward the point. Place each wrapped apple in the prepared baking dish.
Melt the 2 sticks of butter in a saucepan or microwave-safe bowl. Stir in the 1½ cups brown sugar, 1 teaspoon vanilla extract, and 1 teaspoon cinnamon until well combined and smooth.
Pour the butter mixture evenly over the crescent-wrapped apples.
Slowly pour the 12 ounces of 7UP around the rolls, making sure to pour between the rolls rather than directly over the tops.
Bake for 35–45 minutes, or until the crescent dough is puffed and golden brown and the edges are bubbling.
Serve warm with vanilla ice cream, if desired.
Refrigerate any leftovers in an airtight container.
