Crust:
Crush the graham crackers in a food processor or place them in a resealable plastic bag and crush them with a rolling pin until finely ground. You should have about 3 cups of crumbs.
Place the graham cracker crumbs in a large mixing bowl. Stir in the 2 tablespoons granulated sugar.
Melt the 12 tablespoons unsalted butter in a microwave-safe bowl. Pour the melted butter into the graham cracker mixture and stir until all the crumbs are evenly coated.
Press the mixture firmly and evenly into the bottom of a 9-inch springform pan.
Refrigerate the crust for 20 minutes while preparing the filling.
Filling:
In a large mixing bowl, beat the 2 blocks cream cheese with the 14-ounce can of sweetened condensed milk until smooth and creamy.
Add the β
cup lemon juice and 1 teaspoon vanilla extract. Beat until the mixture is completely smooth and well combined.
Pour the filling over the chilled crust and spread it evenly to the edges.
Cover the springform pan with plastic wrap and refrigerate for at least 3 to 4 hours, or until the filling is firm. For the best results, chill overnight.
Once firm, remove the cheesecake from the springform pan. Slice and serve with your favorite canned pie filling, fresh fruit, chocolate, or other toppings.
Refrigerate any leftovers in an airtight container or covered tightly with plastic wrap.
