Instructions
Line two baking sheets with parchment paper or set out approximately 29 cupcake liners.
In a 2.5 to 3 quart saucepan, combine 1/2 cup salted butter, 1 3/4 cups granulated sugar, 1/3 cup unsweetened cocoa powder, and 1/2 cup milk.
Place over medium heat and cook, stirring frequently, until the mixture reaches a full boil.
Let the mixture boil for 60 seconds without stirring.
Remove from heat and immediately stir in 1 teaspoon vanilla extract, 1/2 cup creamy peanut butter, and 3 cups quick oats.
Stir until fully combined. Using a medium cookie scoop or two spoons, drop the mixture onto the prepared baking sheets or into cupcake liners.
Let sit at room temperature for 20–30 minutes until set or refrigerate to speed up the process.
Notes
Store cookies in an airtight container at room temperature for up to 1 week or refrigerate them for up to 2 weeks.
