Ingredients

  • 1/2 cup salted butter
  • 1 3/4 cups granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup creamy peanut butter
  • 3 cups quick oats (don't use old fashioned oats)

Instructions

  • Line two baking sheets with parchment paper or set out approximately 29 cupcake liners.
  • In a 2.5 to 3 quart saucepan, combine 1/2 cup salted butter, 1 3/4 cups granulated sugar, 1/3 cup unsweetened cocoa powder, and 1/2 cup milk.
  • Place over medium heat and cook, stirring frequently, until the mixture reaches a full boil.
  • Let the mixture boil for 60 seconds without stirring.
  • Remove from heat and immediately stir in 1 teaspoon vanilla extract, 1/2 cup creamy peanut butter, and 3 cups quick oats.
  • Stir until fully combined. Using a medium cookie scoop or two spoons, drop the mixture onto the prepared baking sheets or into cupcake liners.
  • Let sit at room temperature for 20–30 minutes until set or refrigerate to speed up the process.

Notes

Store cookies in an airtight container at room temperature for up to 1 week or refrigerate them for up to 2 weeks.
