In a large mixing bowl, whisk together 2 cups all-purpose flour, 2 tablespoons sugar, 1 teaspoon baking powder, and 1/2 teaspoon salt.
In a separate bowl, whisk together 1 cup milk and 2 large eggs until well combined.
Gradually pour the wet ingredients into the dry ingredients, stirring until just combined and the batter is smooth. Do not overmix.
Heat 1/4 cup vegetable oil in a deep skillet or saucepan over medium heat until hot.
Pour approximately 1/2 cup of batter into the hot oil in a circular, crisscrossing pattern to create the funnel cake shape. You can also use a piping bag or squeeze bottle to drizzle the batter.
Fry for 60–90 seconds per side, or until golden brown and cooked through.
Carefully remove the funnel cake from the oil and place it on a paper towel-lined plate to drain.
Immediately dust the warm funnel cake with powdered sugar.
Repeat with the remaining batter until all the funnel cakes are cooked. The batter will make approximately 4–6 funnel cakes, depending on size.
Serve warm and enjoy!
