Ingredients

  • 2 cups fresh strawberries cleaned, divided
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • ¾ cup water
  • Red food coloring optional

Instructions

  • Wash, hull, and chop 1 cup of the fresh strawberries. Place them in a bowl and mash until mostly smooth. Set aside.
  • Wash, hull, and finely dice the remaining 1 cup of fresh strawberries. Set aside.
  • In a medium saucepan, whisk together 1 cup granulated sugar and 3 tablespoons cornstarch.
  • Stir in ¾ cup water and the 1 cup mashed strawberries until well combined.
  • Bring the mixture to a boil over medium heat, stirring constantly.
  • If desired, stir in red food coloring.
  • Continue cooking and stirring for 3 minutes, or until the mixture has thickened.
  • Remove the saucepan from the heat and gently stir in the 1 cup diced strawberries.
  • Transfer the strawberry sauce to a bowl and let it cool for 10–15 minutes.
  • Serve immediately, or refrigerate in an airtight container for up to 2 weeks.
