Lemon Cake Mix Cookies

Lemon Cake Mix Cookies are so delicious and you only need 4 ingredients for this great recipe.  They are so light and fluffy and using a cake mix makes the cookies incredibly simple to make.

Ingredients

  • 1 Lemon Cake Mix
  • 1 Cool Whip 8 ounce
  • 1 Egg
  • 1/2-1 Cup Powdered Sugar

Instructions

  • Preheat oven to 350F. Spray Cookie sheet with non-stick cooking spray.
  • In a large bowl, mix together 1 box lemon cake mix, 1 (8-ounce) container Cool Whip, and 1 egg. The mixture will be very fluffy—continue mixing until well combined.
  • Place 1/2 to 1 cup powdered sugar in a separate bowl. Using a small cookie scoop or two spoons, drop rounded portions of dough into the powdered sugar. Roll each dough ball until completely coated. Place the coated dough balls on the prepared cookie sheet about 2 inches apart.
  • Bake at 350°F for 8 minutes or until the edges are just lightly golden. Let cookies cool on the baking sheet for a couple of minutes before transferring to wire racks to cool completely.
  • Store at room temperature in airtight container. These are best eaten within a day or two of baking.
