Lemon Sugar Cookies

Lemon Sugar Cookies are packed with lemon zest and lemon juice for an amazing treat. These soft and chewy cookies take just minutes to make but turn out perfectly.

Ingredients

  • 3 cups All Purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 cup unsalted butter softened at room temperature
  • 1 1/2 cups Granulated Sugar
  • Zest of 2 Large Lemons
  • 2 Tbsp Fresh Lemon Juice
  • 1 Large Egg
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Granulated Sugar for rolling the cookies

Instructions

  • Preheat the oven to 350 degrees F.
  • In a medium size mixing bowl, whisk together the flour, baking soda, baking powder and salt.  Set aside.
  • In a large mixing bowl, beat together the butter, granulated sugar and lemon zest with a hand held or stand up mixer until well combined and fluffy (1-2 minutes).
  • Then add in the lemon juice, egg and vanilla extract. Mix until combined.
  • Then gradually mix the dry ingredients into the wet ingredients until just combined.  Be careful not to over mix.
  • Then roll the cookie dough into tablespoon size balls and roll them in the granulated sugar.  Then place them on a baking sheet.
  • Bake for 8-10 minutes until the edges of the cookies are slightly browned and set.
  • Let the cookies sit on the baking sheet for 5 minutes and then move them to wire racks to cool completely.
  • Then the cookies are ready to serve and enjoy!

Notes

Store leftover cookies in an airtight container for up to 1 week.  I recommend storing them with a slice of bread to keep the cookies soft and moist.
