Lemonade Pie

Lemonade Pie recipe has just a few simple ingredients so you can make this very quickly. I grew up calling it lemonade icebox pie and it brings back the best memories. Whatever you call it, this is one delicious pie that will quickly become a family favorite!

Ingredients

  • Crust:
  • 1 ½ cups graham cracker crumbs about 11-12 sheets
  • cup granulated sugar
  • teaspoon salt omit if using salted butter
  • ½ cup 1 stick unsalted butter, melted
  • Filling:
  • 1 can 14 oz sweetened condensed milk
  • ¾ cup from 12 oz can frozen lemonade concentrate, thawed
  • Zest from 1 lemon about 1 ½ teaspoons
  • 1 container 8 oz whipped topping, thawed

Instructions

  • Place approximately 11 to 12 graham cracker sheets in a food processor and pulse until you have 1 1/2 cups fine graham cracker crumbs.
  • Transfer the crumbs to a medium mixing bowl. Add 1/3 cup granulated sugar and 1/8 teaspoon salt (omit the salt if using salted butter) and stir to combine.
  • Pour 1/2 cup melted unsalted butter over the crumb mixture and stir until all of the crumbs are evenly coated.
  • Firmly press the mixture into the bottom and up the sides of a 9-inch pie plate.
  • Refrigerate the crust for at least 2 hours, or until firm.
  • In a large mixing bowl, whisk together 1 can (14 ounces) sweetened condensed milk, 3/4 cup thawed frozen lemonade concentrate, and 1 1/2 teaspoons fresh lemon zest until smooth.
  • Gently fold in 1 container (8 ounces) thawed whipped topping until fully combined.
  • Spoon the filling into the chilled graham cracker crust and spread it into an even layer.
  • Cover and refrigerate for at least 6 hours, or overnight, until the pie is completely set.
  • Slice and serve chilled. Store any leftovers covered in the refrigerator.

Notes

**Crust can be made ahead. Keep covered in the refrigerator for up to 3 days or freeze until ready to use. Thaw before filling.
To bake the crust, preheat the oven to 325 degrees and bake for 8-10 minutes. Cool before filling.
