FOR THE CUPCAKES:
Preheat the oven to 350 degrees F and line 2 cupcake tins with cupcake liners.
In a large bowl, beat together the cupcake ingredients with a stand up or hand held mixer until combined (2-3 minutes).
Spoon the batter into the cupcake liners until approximately 2/3 full.
Bake for 20-25 minutes until a toothpick inserted into the center of the cupcakes comes out clean.
Let the cupcakes cool in the pan for 10 minutes and then move them to a wire rack to cool completely.
Make sure they are completely cool before frosting them.
FOR THE FROSTING:
Beat the butter in a medium size mixing bowl until smooth.
Then slowly add in the tequila, lime juice, powdered sugar and lime zest.
Mix on medium speed for 3 minutes until the frosting is creamy and smooth.
Add more sugar if the frosting is too thin and add more tequila if the frosting is too thick.
Icing the cupcakes and then top them with the small lime slices and the lime zest.
Then they are ready to serve and enjoy!
Notes
Refrigerate the leftover cupcakes in an airtight container for up to 5 days.
