Margarita Cupcakes

Margarita Cupcakes are full of fresh lime flavor. The lime cupcake is delicious and moist and topped with a Tequila Lime Frosting.

Ingredients

  • FOR THE CUPCAKES:
  • 1 Box White Cake Mix
  • 3/4 cup Nonalcoholic Margarita Mix
  • 1/2 cup Water
  • 1/3 cup Vegetable Oil
  • 1 Tbsp Lime Zest
  • 3 Egg Whites
  • FOR THE FROSTING:
  • 1 1/2 cup Unsalted Butter softened
  • 4 Tbsp Tequila
  • 2 Tbsp Lime Juice
  • 8 cups Powdered Sugar
  • 2 tsp Lime Zest
  • FOR THE TOPPING:
  • 3 Limes Sliced Small
  • 2 Tbsp Lime Zest

Instructions

  • FOR THE CUPCAKES:
  • Preheat the oven to 350 degrees F and line 2 cupcake tins with cupcake liners.
  • In a large bowl, beat together the cupcake ingredients with a stand up or hand held mixer until combined (2-3 minutes).
  • Spoon the batter into the cupcake liners until approximately 2/3 full.
  • Bake for 20-25 minutes until a toothpick inserted into the center of the cupcakes comes out clean.
  • Let the cupcakes cool in the pan for 10 minutes and then move them to a wire rack to cool completely.
  • Make sure they are completely cool before frosting them.
  • FOR THE FROSTING:
  • Beat the butter in a medium size mixing bowl until smooth.
  • Then slowly add in the tequila, lime juice, powdered sugar and lime zest.
  • Mix on medium speed for 3 minutes until the frosting is creamy and smooth.
  • Add more sugar if the frosting is too thin and add more tequila if the frosting is too thick.
  • Icing the cupcakes and then top them with the small lime slices and the lime zest.
  • Then they are ready to serve and enjoy!

Notes

Refrigerate the leftover cupcakes in an airtight container for up to 5 days.
