- 1 cup 2 sticks butter softened

Preheat the oven to 350°F. Line a 9x13-inch baking pan with foil or parchment paper and coat it with nonstick cooking spray.
In a large mixing bowl, beat together 1/2 cup powdered sugar and 1 cup (2 sticks) softened butter until light and creamy.
Gradually mix in 2 cups all-purpose flour until a thick dough forms.
Press the dough evenly into the prepared baking pan.
Bake for 15-20 minutes, or until the edges are lightly golden but the top is still pale.
While the crust bakes, whisk together 2 cups granulated sugar, 4 eggs, 1/3 cup freshly squeezed lemon juice, 1/4 teaspoon lemon extract, and 1/2 teaspoon baking powder until smooth. Do not overmix.
Remove the crust from the oven and immediately pour the lemon filling evenly over the hot crust.
Return the pan to the oven and bake for 15-20 minutes, or until the center is set and no longer jiggles when gently shaken.
Let the lemon bars cool completely in the pan before lifting them out using the foil or parchment overhang. Cut into squares and serve.
