Watermelon Sorbet is a refreshing treat with only 4 ingredients and no ice cream maker needed. This dairy free and healthy snack will satisfy your craving and beat the heat.

Ingredients

  • 5 1/2 cups cubed seedless watermelon
  • 1/4 cup water
  • 1/4 cup sugar
  • Juice from 1/2 lime

Instructions

  • Dice the watermelon into small cubes and place in a shallow container or baking sheet.
  • Freeze the fruit at least 4 hours but overnight is best.
  • Make a simple syrup by combining the sugar and water in a small saucepan. Bring to a boil over medium heat until the sugar is dissolved.
  • Add the lime juice to the saucepan and combine.
  • Place the frozen watermelon in a food processor or blender along with the simple syrup. Blend until the mixture is the consistency of puree. Scrape down the sides to ensure the mixture is well combined.
  • Enjoy immediately or freeze if you prefer a firmer texture.

Notes

Store the sorbet in a freezer container for up to 2 weeks. Longer storage will create ice crystals on top and the texture will change.
You can substitute lemon juice for lime juice. Fresh juice is recommended for the best flavor.
If your watermelon is in season and very sweet, the simple syrup may not be needed. You can also adjust the amount of simple syrup to reduce the sweetness if desired. I do not recommend adding sugar to the sorbet without using a simple syrup or the texture will be grainy.
