- 1 can Apple Pie Filling 21 oz
- 1 pkg Refrigerated Pie Crust 2 crusts in the package, defrosted
- 1/2 cup Salted Caramel Sauce
- 1 Egg Lightly Beaten
- 1 tsp Cinnamon
- 1/4 cup Granulated Sugar

Preheat the oven to 350 degrees and line a cookie sheet with parchment paper.
Place the apple pie filling on a cutting board and cut the apples in the filling into smaller bite size pieces.
Roll one of the pie crust onto a cutting board or a flat working surface. Spread the salted caramel sauce evenly onto the pie crust dough. Then pour the chopped apple pie filling on top of the caramel sauce on the pie crust.
On a separate cutting board, roll out the 2nd pie crust. Use a pizza cutter to cut this pie crust into 1/4 inch thick strips and create a lattice topping over the filling.
Use a 2.5 inch circle cookie cutter, to cut out the cookies and place them one the prepared baking sheet.
Brush the top of the cookies with the beaten egg.
Combine the cinnamon and sugar together in a small bowl and sprinkle the top of the cookies with this mixture generously.
Bake for 20-25 minutes until the cookies are golden brown.
Let the cookies rest on the baking sheet for 5 minutes and then move the cookies to a wire rack to cool completely.
*You can lay the pie crust strips on top of the cookies horizontally and vertically if the lattice work is intimidated.
*Store leftover cookies at room temperature in an airtight container for up to 1 week. I love warm cookies, so I recommend reheating them for 10-15 seconds in the microwave before enjoying the leftovers.
