Ingredients

  • Apple Pie Filling. You can use store bought or homemade apple pie filling. If making your own, the best apple to try include golden delicious, honeycrisp, granny smith apples or pink lady.
  • Refrigerated Pie Crust. I used store-bought pie crust but feel free to make 3 Ingredient Pie Crust Recipe. It is easy with all purpose flour.
  • Salted Caramel Sauce. You can also use Homemade Caramel Sauce Recipe if you prefer not to use salted.
  • Egg. Lightly Beaten 
  • Cinnamon. Adjust to taste if desired.

Variations

  • Pie Filling. Apple is great but you can try other types of pie filling. Some ideas include: cherry, blueberry, blackberry, braeburn and peach.
  • Lattice Crust. While this is so pretty, it is optional. You can place a normal piece of pie crust on top of the cookies.
  • Sea Salt. Top the cookies with a sprinkle of sea salt.
  • Cookie Dough. Soft Sugar Cookie Recipe is another option to use instead of pie crust.

How to Make Apple Pie Cookies

  • Step 1. Preheat the oven. It should be set to 350 degrees. Line a cookie sheet with parchment paper.

Step 2. Prepare the pie filling. Place the apple pie filling on a cutting board and cut the apples into smaller bite size pieces. Stir together with a rubber spatula and sprinkle with spices. You should not have to use cornstarch to thicken pie filling like you would homemade.

Step 3. Next, roll one of the pie crusts onto a cutting board.  Spread the salted caramel sauce evenly onto the pie crust dough.  Then spoon the chopped apple mixture on top of the caramel sauce on the pie crust.

Step 4. Prepare the second pie crust. On a separate cutting board, roll out the pie crust.  Use a pizza cutter to cut into strips. Create the lattice tops over the apple filling.

Step 5. Cut out the cookies using a 2.5 inch round cookie cutter. Then place them on the baking sheet.

Step 6. Top the cookies with the egg wash. Brush the top of the cookies with the beaten egg.

Step 7. Mix together the cinnamon and sugar. Sprinkle the centers of each cookie with this mixture generously. Bake the cookies. They will take about 20 to 25 minutes until the cookies are golden brown.  Allow to rest a few minutes and then move to a wire rack to cool completely.

Serving Suggestions

  • Ice cream. These are delicious served warm and topped with scoops of No Churn Vanilla Ice Cream. I like to put a couple of these mini apple pie cookies in a bowl. Generously top with ice cream and it is so decadent.

Pro Tips

  • Simple Crust Topping. If creating a lattice top feels a bit tricky, don’t worry, you can simply lay strips of pie crust horizontally and vertically across the cookies. It still looks great and keeps things simple.
  • Easy Strip Cutting. A pizza cutter works perfectly for cutting even strips of dough for the lattice or simple crisscross topping. It’s quicker and cleaner than using a knife.
  • Smart Use of Leftovers. Don’t toss leftover pie dough and filling! Roll out the extra dough, press it into a mini pie dish or ramekin, and add the remaining filling for a quick apple pie. Even a small batch makes a delicious treat.
  • Chop Apples Small. Be sure to dice the apples into small, bite-sized pieces when making the filling. Larger chunks won’t bake evenly in cookie form and can overwhelm the small size of the cookies.
  • Line Your Pan. Always line your baking sheet with parchment paper or a silicone baking mat. This helps prevent sticking, promotes even baking, and makes cleanup much easier.

Storage

Store leftover apple pie cookies in an airtight container at room temperature for up to 1 week. To keep them from sticking together, place a sheet of wax paper between each layer. You can also wrap the cookies in plastic wrap before placing them in the container for added freshness.

If you enjoy warm cookies, simply reheat one or two in the microwave for about 10–15 seconds before serving. They’ll taste just like they came out of the oven. Soft, warm, and full of cozy apple flavor.

For longer storage, you can freeze them in a single layer until firm, then transfer to a freezer-safe container or bag for up to 2 months.

Instructions

  • Brush the top of the cookies with the beaten egg.
  • Combine the cinnamon and sugar together in a small bowl and sprinkle the top of the cookies with this mixture generously.
  • Bake for 20-25 minutes until the cookies are golden brown.
  • Let the cookies rest on the baking sheet for 5 minutes and then move the cookies to a wire rack to cool completely.
