Banana Coffee Cake

Banana Coffee Cake is an easy treat for breakfast, brunch or a delicious snack. It has all the flavors of Banana Bread in a delightful coffee cake recipe with crumble topping and glaze.

Ingredients

For Coffee Cake:

  • 1 ½ cup All Purpose Flour
  • ½ teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • ½ teaspoon Salt
  • ¾ cup Unsalted Butter softened
  • ¾ cup Granulated Sugar
  • 3 Tablespoons Sour Cream
  • 1 Large Egg room temperature
  • 2 teaspoons Vanilla Extract
  • 3 Very Ripe Bananas mashed
  • ½ teaspoon Ground Cinnamon

For the Crumb Topping:

  • cup Unsalted Butter melted
  • 1 ¼ cup All Purpose Flour
  • cup Granulated Sugar
  • cup Brown Sugar
  • 1 teaspoon Ground Cinnamon

For the Glaze:

  • ½ cup Powdered Sugar
  • 1-2 Tablespoons Milk

Instructions

For the Coffee Cake:

  • Preheat the oven to 350 degrees Fahrenheit.  Grease and lightly flour a 9X( baking dish.
  • Mix together the butter and sugar in a large bowl with a hand held mixer or stand up mixer until combined.
  • Stir in the mashed bananas, egg, sour cream and vanilla extract.  Mix until well combined.
  • In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon and salt.
  • Slow mix the dry ingredients into the wet ingredients until just combined.  I prefer to mix this by hand so that the batter does not get over mixed.
  • Pour the batter into the prepared baking dish.

  • Melt the butter in a microwave safe mixing bowl.
  • Stir in the flour, brown sugar, granulated sugar and cinnamon.
  • Sprinkle the mixture evenly on top of the batter in the pan.
  • Bake for 35-40 minutes until a toothpick inserted into the center of the cake comes out clean.
  • After the cooking time, let the cake cool on a wire rack before topping with the glaze.

For the Glaze:

  • Whisk together the powdered sugar and 1 tablespoon of the milk.  Add more milk until the glaze is the consistency that you prefer.
  • Drizzle the glaze over the cooled cake.
  • Then the cake is ready to slice, serve and enjoy!

Notes

Store the leftovers in an airtight container at room temperature for up to 3-4 days or refrigerate for up to 1 week.
