Instructions
For the Coffee Cake:
Preheat the oven to 350 degrees Fahrenheit. Grease and lightly flour a 9X( baking dish.
Mix together the butter and sugar in a large bowl with a hand held mixer or stand up mixer until combined.
Stir in the mashed bananas, egg, sour cream and vanilla extract. Mix until well combined.
In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon and salt.
Slow mix the dry ingredients into the wet ingredients until just combined. I prefer to mix this by hand so that the batter does not get over mixed.
Pour the batter into the prepared baking dish.
For the Crumb:
For the Crumb:
Melt the butter in a microwave safe mixing bowl.
Stir in the flour, brown sugar, granulated sugar and cinnamon.
Sprinkle the mixture evenly on top of the batter in the pan.
Bake for 35-40 minutes until a toothpick inserted into the center of the cake comes out clean.
After the cooking time, let the cake cool on a wire rack before topping with the glaze.
For the Glaze:
Whisk together the powdered sugar and 1 tablespoon of the milk. Add more milk until the glaze is the consistency that you prefer.
Drizzle the glaze over the cooled cake.
Then the cake is ready to slice, serve and enjoy!
Notes
Store the leftovers in an airtight container at room temperature for up to 3-4 days or refrigerate for up to 1 week.
