Step by step instructions
Step 1. While the oven is preheating, beat the butter and sugar. I used a hand mixer.
Step 2. Stir in the mashed bananas, egg, sour cream and vanilla extract. Mix until well combined.
Step 3. Get out a separate bowl. Whisk together the dry ingredients.
Step 4. Mix together the dry ingredients and the wet ingredients until just combined. Do not overmix. I prefer to mix this by hand so that the batter does not get over mixed.
Step 5. Pour the batter into the prepared baking dish.
Step 6. Make the crumble. Melt the butter in a microwave safe bowl. Then add the flour, sugar and cinnamon.
Step 7. Finally, sprinkle the mixture evenly on top of the batter in the pan.
Step 8. Bake the coffee cake until a toothpick inserted comes out clean.
Step 9. While the cake cools, make the glaze. Whisk together the powdered sugar and milk. You can add more milk until the glaze is the consistency that you prefer.
Step 10. Drizzle the glaze over the cooled cake. Serve and enjoy.

- ½ teaspoon Baking Soda

- ¾ cup Granulated Sugar
- 3 Tablespoons Sour Cream
- 1 Large Egg room temperature
- 2 teaspoons Vanilla Extract
- 3 Very Ripe Bananas mashed
- ½ teaspoon Ground Cinnamon
For the Crumb Topping:
- ⅓ cup Unsalted Butter melted
- 1 ¼ cup All Purpose Flour
- ⅓ cup Granulated Sugar
- ⅓ cup Brown Sugar
- 1 teaspoon Ground Cinnamon
For the Glaze:
- ½ cup Powdered Sugar
- 1-2 Tablespoons Milk
Instructions
For the Coffee Cake:
- Preheat the oven to 350 degrees Fahrenheit. Grease and lightly flour a 9X( baking dish.
- Mix together the butter and sugar in a large bowl with a hand held mixer or stand up mixer until combined.
- Stir in the mashed bananas, egg, sour cream and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon and salt.
- Slow mix the dry ingredients into the wet ingredients until just combined. I prefer to mix this by hand so that the batter does not get over mixed.
