Blueberry Popsicles

Homemade Blueberry Popsicles recipe has just 3 simple ingredients for a creamy and refreshing frozen treat. This comes together fast for a tasty Summertime snack.

Ingredients

  • 2 cups Blueberries fresh or frozen
  • 2 Tbsp Sugar
  • 2 cups Vanilla Greek Yogurt

Instructions

  • Blend the blueberries with the sugar in a blender or food processor until combined and thoroughly blended (smoothie like consistency).
  • Add the yogurt to a large bowl.  Pour the blueberry mixture into the bowl and gently mix it together but do not thoroughly combine it together so that the mixture has a swirl pattern (you want there to be some white parts and some blue parts).
  • Pour the mixture evenly into the popsicle molds and add the popsicle sticks.
  • Place the molds in the freezer and freeze for 4-6 hours or until the popsicles are fully frozen (overnight works great too).
  • When you are ready to serve, run warm water on the outside of the molds to loosen the popsicles from the molds.
  • Then they are ready to enjoy!

Notes

These homemade popsicles will last for 6 weeks in the freezer.  I recommend storing them in the molds. 
This recipe can also easily be made with any flavor of yogurt that you prefer and regular vanilla yogurt would work great too.
