Ingredients

  • 15-20 Strawberries (approximately 1 pound)
  • 2 Cups Granulated Sugar
  • 1/4 Cup Corn Syrup
  • 1 Cup Water

Instructions

  • Stir together the sugar, corn syrup and water in a medium saucepan and heat over medium heat.
  • Watch and continue to stir the mixture until the sugar is dissolved.
  • Increase the heat to high and bring the mixture to a boil.
  • Boil and do not stir until the mixture reaches 300 degrees with a candy thermometer.
  • Turn the heat off and immediately dip the strawberries in the mixture using a skewer.
  • Place the strawberries on a baking sheet lined with a silicone liner to cool and harden.
  • Once hardened, the strawberries are ready to serve and enjoy!

Notes

Watch the boiling mixture carefully so it does not exceed 300 degrees or it will burn.
Remove excess coating from the strawberries by tapping off the excess before placing on the baking sheet.
Line the pan with a silicone liner. This works better with the sticky coating than parchment paper in my experience and makes for easy clean up.
These are best served right away. You can store inside an airtight container in the refrigerator for up to 5 hours. After that, the coating will soften.
