  • Strawberries. You will need about a pound.
  • Granulated Sugar. Just regular white sugar.
  • Corn Syrup. Gives the coating the perfect texture.

Step By Step Instructions

Step 1. First, stir together the sugar, corn syrup and water in a medium saucepan. Heat over medium high heat. You will need to watch the mixture carefully and continue to stir as the sugar dissolves and is lightly bubbling.

Step 2. Once combined, increase the heat to high and bring to a boil. Once boiling, do not stir until the mixture reaches 300 degrees with a candy thermometer. The mixture shoule be a caramel, golden color.

Step 3. Next, turn the heat off. Immediately dip the strawberries in the candied mixture using a skewer.

Step 4. After you coat the strawberries, place them on a baking sheet lined with a silicone liner to cool and harden. Once the coating has set and hardened, serve right away on the tray.

Storage

I recommend serving the candied strawberries right away. If you do need to store them, place inside an airtight container in the refrigerator up to 5 hours. After that, the thin hard candy shell coating will soften and puddle.

Pro Tips

  • Use a candy thermometer. Watch the boiling mixture carefully so it does not exceed 300 degrees, or it will burn. It does not have to exceed 300 degrees much for the mixture to burn.
  • Remove excess coating. Try to remove any excess syrup. Tap the strawberries on the side of the pan before placing on the baking sheet.
  • Prepare the pan. Line the pan with a silicone mat. This works better with the sticky coating than parchment paper in my experience and makes for easy clean up.  
  • Wash and dry the fruit. Make sure that you wash and pat dry thoroughly with paper towels the berries before coating.
  • Be very careful with the coating. It is extremely hot so use caution when dipping the strawberries.

What is Tanghulu?

Candied Strawberries or candied fruit are also called Tanghula in China. This fruit with candied shell is very popular with street vendors.

Do you have to use a candy thermometer?

I highly recommend using one, so you aren’t guessing about the coating being the right temperature.

Can I use other types of fruit?

Yes, the sugar coating is delicious on an assortment of fruit. Try blueberries, pineapple, grapes or any fruit you love.

What can I use to dip the strawberries?

You can use skewers or lollipop sticks. It just needs to be long enough so that you aren’t sticking your hand into the hot liquid. Make sure to insert through the stem end.

Can I use brown sugar?

Brown sugar will work but the coating will have a molasses flavor, and the color will be darker.

  • 15-20 Strawberries (approximately 1 pound)
  • 2 Cups Granulated Sugar
  • 1/4 Cup Corn Syrup
  • 1 Cup Water

Instructions

  • Increase the heat to high and bring the mixture to a boil.

Recipe Notes

Watch the boiling mixture carefully so it does not exceed 300 degrees or it will burn.
Remove excess coating from the strawberries by tapping off the excess before placing on the baking sheet.
Line the pan with a silicone liner. This works better with the sticky coating than parchment paper in my experience and makes for easy clean up.
