- 1 cup Unsalted Butter softened
- 1 cup Brown Sugar
- 1/2 cup Granulated Sugar
- 2 Large Eggs room temperature
- 2 teaspoons Vanilla Extract
- 1 teaspoon Baking Powder
- 1 Teaspoon Baking Soda
- 2 teaspoon Cornstarch
- 1/2 teaspoon Salt
- 2 1/2 cups All Purpose Flour
- 1 1/2 cup Semi-Sweet Chocolate Chips
- 24 Caramel Candies 1/2 inch squares
Get Recipe Ingredients
Beat together the butter and both sugars together with a hand held or stand up mixer or light and fluffy. Then add in the eggs, vanilla extract, baking powder, baking soda, cornstarch and salt. Mix until combined.
Then gradually stir in the flour until just combined on low speed. Be careful not to over mix.
Fold the chocolate chips into the cookie dough.
Scoop the cookie dough out into approximately 1 1/2 tablespoons size cookie balls. Gently make a well into each of the cookie dough balls and place a caramel candy into the cookie dough and form the dough around the caramel.
Place the cookie dough balls on a baking sheet and chill for 10-15 minutes.
Preheat the oven to 375 degrees F while the dough is chilling.
Bake for 8-10 minutes until the edges of the cookies are slightly golden brown.
Allow the cookies to sit on the baking sheets for 5 minutes. Then move them to cooling racks to cool completely.
Then the cookies are ready to serve and enjoy!
The caramel candies need to be approximately 1/2 inch size cubes. If they are large, cut them down before using in this recipe.
Make sure that the caramel is completely covered with the cookie dough or the caramel may ooze out as the cookies are cooking.
Store the leftover cookies in an airtight container for up to 1 week. Store a piece of bread in the container with the cookies to keep them soft.
