The entire recipe for cookies filled with caramel is very simple but the results are bakery quality. These tasty cookies take very little time to prepare and bake. You can enjoy these in about 30 minutes from start to finish.

Ingredients

Ingredients for Caramel Stuffed Cookies.
  • Unsalted Butter. This should be softened at room temperature.
  • Brown Sugar. Try Homemade Brown Sugar Recipe.
  • Large Eggs. The eggs need to be room temperature.
  • Vanilla Extract. Pure vanilla extract is best. 
  • Baking Soda. Best Baking Soda Substitutes
  • Semi-Sweet Chocolate Chips. Semi Sweet helps to reduce the sweetness.
  • Caramel Candies. Use the ones that are about ½ inch squares.

Substitutions and Additions

  • Salted Caramel. Substitute salted caramel for regular caramel for a sweet and salty twist.
  • Sea Salt. Sprinkle sea salt on the cookies for a tasty combination. Make sure to do this before you bake the cookies so the salt will stick.
  • Chocolate Chips. We used semi sweet chocolate chips but you can use milk chocolate, white chocolate or a combination of both.
  • Nuts. Add chopped walnuts or pecans to the cookie batter for a delightful flavor addition.

How to Make Caramel Stuffed Cookies

Step 1. Combine the butter and sugar with a handheld or stand mixer until light and fluffy.

Step 2. Then add in the eggs, vanilla extract, baking powder, baking soda, cornstarch and salt. Mix until well combined.  

Step 3. Then gradually stir in the flour until just combined.  Be careful not to over mix. 

Step 4. Fold the chocolate chips into the cookie dough. Make sure to do this step by hand.

Step 5. Form the cookies. Scoop the cookie dough into balls. 

Step 6. Gently make a well into each of the cookie dough balls. Then place a caramel candy into the cookie dough. Form the dough around the caramel. 

Step 7. Chill the dough. Place the cookie dough balls on a baking sheet and chill for about 15 minutes. 

Step 8. Finally, bake the cookies for 8-10 minutes until the edges of the cookies are slightly golden brown. Be careful that you do not overcook them. Allow to sit on the baking sheet a few minutes before moving to a cooling rack.

Storage

Store the leftover cookies in an airtight container at room temperature for up to 1 week.  Place a piece of bread in the container with the cookies to keep them soft.

Can You Freeze Caramel Stuffed Cookies?

The dough can be frozen before it is baked. Form into balls and complete the steps as normal. Place on a cookie sheet lined with parchment paper.

Freeze for 1 to 2 hours and transfer the cookies to a freezer bag or freezer container. This method is really easy and helps to prevent them from sticking.

When ready to enjoy, bake as normal. You might need to add a few extra minutes to the baking time if they are frozen.

You can also freeze these caramel filled cookies after they are baked. Allow to cool and put the cookies inside a freezer bag or container. Separate the layers of cookies with wax paper.

Expert Tips

  • Caramel. The caramel candies need to be approximately ½ inch size cubes.  If they are large, cut them down before using in this recipe. If they are too large, they will ooze out while baking.
  • Cover with dough. Make sure that the caramel is completely covered with the cookie dough or the caramel may ooze out as the cookies are cooking. 
  • Don’t over bake the cookies. They will continue to set on the baking sheet as they cool.
  • Room temperature ingredients. Make sure the butter and eggs are at room temperature before combining with the other ingredients.

  • Preheat the oven to 375 degrees F while the dough is chilling.
  • Bake for 8-10 minutes until the edges of the cookies are slightly golden brown.
  • Allow the cookies to sit on the baking sheets for 5 minutes.  Then move them to cooling racks to cool completely.
  • Then the cookies are ready to serve and enjoy!
