Ingredients

  • 1 ¾ cups heavy whipping cream
  • 15 oz can dark red cherries drained
  • 1 ½ cups sweetened condensed milk
  • 2 tsp vanilla extract
  • 1 cup mini chocolate chips

Instructions

  • Use an electric hand mixer to whip the cream in a large mixing bowl. Start on a low speed and increase the speed as the cream thickens until it begins to form soft peaks.
  • Once the heavy cream forms soft peaks, add the cherries, condensed milk, and vanilla extract. Continue whipping the mixture on a high speed until the condensed milk is fully incorporated into the cream and the cherries are scattered evenly throughout the mixture.
  • Add the mini chocolate chips and gently fold them into the ice cream mixture.
  • Pour the ice cream mixture into a large plastic container or a 9x5 inch loaf pan and allow it to sit in the freezer covered with plastic wrap for 24 hours.
  • Serve and enjoy!

Notes

I like to add the cherries with the condensed milk instead of with the chocolate chips so that they are broken up a little bit. This helps to release the cherry juice throughout the ice cream mixture.
You can store this ice cream in the freezer covered with plastic wrap for up to one month.
I like to use mini chocolate chips because they will not freeze as hard as normal sized chocolate chips. This gives you just as much chocolate flavor without worrying about biting into a frozen chocolate chip.
The vanilla extract helps complement the fruity sweetness of the cherries. If you want to amplify the cherry flavor, you can sub the vanilla for 1 teaspoon of almond extract.
You want to make sure the cream has reached soft peaks before adding anything to ensure the cherries and chocolate chips do not sink to the bottom of the container before the ice cream is fully set.
