With only a handful of ingredients, these addictive Chex Scotcheroos will be a hit. These little clusters are packed with peanut butter, butterscotch and chocolate for a gooey treat.
Line a baking sheet with parchment paper and set aside.
Place the Chex Cereal in a large mixing bowl.
In a small saucepan, stir together the light corn syrup, peanut butter and granulated sugar. Heat over medium high heat until the sugar is dissolved and the mixture is smooth.
Pour the mixture over the cereal in the mixing bowl and gently stir to coat the cereal evenly in the mixture.
Use a cookie scoop to scoop the cereal mixture out of the bowl and place it on the baking sheet into small clusters.
Allow the clusters to cool completely at room temperature.
Place the chocolate chips, butterscotch chips and vanilla extract in a microwave safe bowl. Heat in 30 second intervals in the microwave, stirring after each interval, until melted and combined.
Spoon the melted chocolate mixture on top of the clusters. Allow the clusters to sit at room temperature until the chocolate is set.
Then the clusters are ready to serve and enjoy!
