Chex Scotcheroos

With only a handful of ingredients, these addictive Chex Scotcheroos will be a hit. These little clusters are packed with peanut butter, butterscotch and chocolate for a gooey treat.

Ingredients

  • 6 cups Chex cereal (Rice or Corn)
  • 1 cup light corn syrup
  • 1/2 cup Granulated Sugar
  • 1 cup creamy peanut butter
  • 1 cups semi sweet chocolate chips
  • 1 cups butterscotch chips
  • 1 teaspoon vanilla extract

Instructions

  • Line a baking sheet with parchment paper and set aside.
  • Place the Chex Cereal in a large mixing bowl.
  • In a small saucepan, stir together the light corn syrup, peanut butter and granulated sugar.  Heat over medium high heat until the sugar is dissolved and the mixture is smooth.
  • Pour the mixture over the cereal in the mixing bowl and gently stir to coat the cereal evenly in the mixture.
  • Use a cookie scoop to scoop the cereal mixture out of the bowl and place it on the baking sheet into small clusters.
  • Allow the clusters to cool completely at room temperature.
  • Place the chocolate chips, butterscotch chips and vanilla extract in a microwave safe bowl.  Heat in 30 second intervals in the microwave, stirring after each interval, until melted and combined.
  • Spoon the melted chocolate mixture on top of the clusters.  Allow the clusters to sit at room temperature until the chocolate is set.
  • Then the clusters are ready to serve and enjoy!

Notes

Store leftovers in an airtight container at room temperature for up to 1 week.
