Each bite has the rich flavor of peanut butter and butterscotch. The clusters are topped in melted chocolate for an absolutely delicious treat.

Ingredients

Ingredients for Scotcheroos - chex cereal, peanut butter, corn syrup, semi sweet chocolate chips, butterscotch chips, vanilla.
  • Chex cereal. You can use rice or corn.
  • Light corn syrup. I prefer to use light corn syrup, but you can use dark if you prefer.
  • Peanut butter. Use creamy peanut butter for the best texture.
  • Semi-sweet chocolate chips. This helps to make the recipe not overly sweet.
  • Butterscotch chips. Combines into a delicious mixture with the peanut butter.
  • Vanilla extract. Pure vanilla is best.

Variations

  • Chocolate. Substitute white chocolate, milk chocolate or dark chocolate.
  • Butterscotch. You can use peanut butter chips instead of butterscotch chips, but the flavor will be different.
  • Sea Salt. Top each cluster with sea salt before the chocolate sets.
  • Sprinkles. Use sprinkles on the clusters to celebrate special occasions or holidays.

Step By Step Instructions

  • Step 1. Prepare the pan by lining with parchment paper.
  • Step 2. Get out a large bowl and place the Chex Cereal into it.

Step 3. Use a small saucepan, stir together the light corn syrup, peanut butter and granulated sugar.  Combine over medium high heat until the sugar is completely dissolved. The mixture should be smooth.

Step 4. Once melted, pour the mixture over the cereal in the bowl. Carefully stir to coat the cereal.

Step 5. Form the mixture into cookies with a cookie scoop. Place on the baking sheet. Allow the piles to cool.

Step 6. Melt the topping. Use a microwave safe bowl and place the chocolate chips, butterscotch chips and vanilla extract in it.  Heat in 30 second intervals until melted and combined. Make sure to stir between each interval.

Step 7. Once melted, pour mixture on top of the clusters.  Then allow the clusters to sit at room temperature until the chocolate is set.

Step 8. Once set, serve and enjoy Chex Scotcheroos.

Storage

Place the leftovers in an airtight container at room temperature. They will last up to 1 week. 

Pro Tips

  • Do not overheat chocolate. Microwave in intervals so that it does not burn.
  • Stir between increments. After each 30 second increment, stir the chocolate.
  • Use a cookie scoop. It’s easiest to get all of the clusters the same size if you use a cookie scoop.
  • Don’t use natural peanut butter. The oils in natural peanut butter will make the mixture too runny. It won’t have the same texture as using traditional peanut butter.
  • Mix Ins are fun to use. Change the recipe by adding various mix ins to the cereal mixture. Peanuts, cashews, pretzels or crushed candy bars are tasty.
  • Allow the clusters to cool before adding chocolate. The clusters need to completely cool before adding melted chocolate.
  • Line the pan. Make sure to line the baking sheet with wax paper or a silicone baking mat.

Instructions

  • Line a baking sheet with parchment paper and set aside.
  • Place the Chex Cereal in a large mixing bowl.
  • In a small saucepan, stir together the light corn syrup, peanut butter and granulated sugar.ย  Heat over medium high heat until the sugar is dissolved and the mixture is smooth.
  • Pour the mixture over the cereal in the mixing bowl and gently stir to coat the cereal evenly in the mixture.
  • Use a cookie scoop to scoop the cereal mixture out of the bowl and place it on the baking sheet into small clusters.
  • Allow the clusters to cool completely at room temperature.
  • Place the chocolate chips, butterscotch chips and vanilla extract in a microwave safe bowl.ย  Heat in 30 second intervals in the microwave, stirring after each interval, until melted and combined.
  • Spoon the melted chocolate mixture on top of the clusters.ย  Allow the clusters to sit at room temperature until the chocolate is set.
  • Then the clusters are ready to serve and enjoy!
