Chocolate Chip Pretzel Cookies

Ingredients

  • 1 cup Unsalted Butter softened
  • 1 cup Brown Sugar
  • 1 cup Granulated Sugar
  • 2 large Eggs room temperature
  • 1 tsp Vanilla Extract
  • 2 1/4 cups All Purpose Flour
  • 1 tsp Baking Soda
  • 2 teaspoons Cornstarch
  • 1/2 tsp Salt
  • 1 cup Crushed Pretzels
  • 2 cups Chocolate Chips

Instructions

  • Beat together the butter and both sugars with a hand held mixer or stand up mixer until creamy.
  • Then add in the eggs and vanilla extract.  Mix until combined.
  • In a separate bowl, mix together the flour, baking soda, cornstarch and salt.
  • Reduce the mixer speed to low and slowly add in the flour mixture.  Mix until just combined, being careful not to over mix.
  • Then gently stir in the crushed pretzels and chocolate chips (reserve some for topping) by mixing these into the dough by hand.
  • Then refrigerate the dough for 30-60 minutes.
  • Preheat the oven to 350 degrees F.
  • Place tablespoons of the dough onto a baking sheet using a cookie scoop.  Gently press the dough down and top each cookie with the reserved crushed pretzels and chocolate chips.
  • Bake for 9-11 minutes until the edges of the cookies are slightly golden brown.
  • Remove from the oven and let the cookies sit on the baking sheet for 5 minutes, then move them to a wire rack to cool completely.
  • Then the cookies are ready to serve and enjoy!

Notes

Store any leftover cookies in an airtight container at room temperature for up to 1 week.  Place a piece of bread in the container with the cookies to keep them soft.
