Chocolate Covered Cherries

  • Drain the cherries from the jar and reserve the cherry juice from the jar.
  • Dry the cherries as much as possible using paper towels.
  • În a medium size mixing bowl, stir together 3 cups of powdered sugar, butter and 1/4 cup Cherry juice.  Then gradually add in the last cup of powdered sugar until a dough forms. Refrigerate the dough for 30 minutes.
  • Roll the dough out into approximately 1 inch size balls.  Flatten out the dough balls.
  • Then fold a flatten dough ball around a cherry and roll it out with your hands to make it smooth.
  • Place the cherries on a baking sheet lined with parchment paper and refrigerate them for 30 minutes.
  • Place the chocolate and oil in a microwave safe bowl.
  • Microwave in 20 second intervals, stirring after each interval, until the chocolate is melted and smooth.
  • Then dip each of the cherries in the melted chocolate (holding them by the stems).  Allow the excess chocolate to drip off and then place the cherry on a baking sheet lined with parchment paper.  Repeat this process until all the cherries have been coated with the chocolate.
  • Let the cherries sit at room temperature until the chocolate is set (approximately 30-60 minutes).
  • Then the cherries are ready to serve and enjoy!

Notes

Store the leftovers in an airtight container at room temperature for up to 2 weeks.
