This recipe is very simple, and you don’t need a double boiler or anything special. It comes together easily in a few simple steps. Ingredients

  • Maraschino Cherries with Stems. Make sure to use the ones with a stem.
  • Powdered Sugar. Sift the powdered sugar if its lumpy.
  • Salted Butter. Softened at room temperature.
  • Semi-Sweet Chocolate Chips. Semi-Sweet helps to balance the sweetness of the recipe.

Variations

  • Chocolate. Substitute white chocolate or dark chocolate chips for the milk chocolate in this recipe. You can also drizzle a different type of chocolate on these treats.
  • Sprinkles. Top each one with sprinkles before the chocolate sets. You can coordinate colors with holidays, special occasions and more. Try red and green for Christmas.
  • Candy melts. Try different colors of candy melts and drizzle on top for a festive dessert for any occasion.

How to Make Chocolate Covered Cherries

Step 1. Remove the juice from the cherries. Save the juice for later. Dry cherries as much as possible using paper towels. These will not have cherry pits.

Step 2. Use a medium size mixing bowl and stir together powdered sugar, butter and Cherry juice.

Step 3. Then gradually add in the last cup of powdered sugar until a dough forms.

Step 4. Once combined, place in the fridge for 30 minutes.

Step 5. Roll the dough into approximately 1 inch size balls.  Then flatten out the dough balls.  You can use a cookie scoop if you prefer.

Step 6. Then fold a flattened dough ball around a cherry.

Step 7. Roll it out with your hands to make it smooth.

Step 8. Place on a baking sheet. Then refrigerate for 30 minutes.

Step 9. Place the chocolate and oil in a microwave safe bowl.  Microwave in 20 second intervals. Make sure to stir after each interval. Learn How to Melt Chocolate Chips.

Step 10. Then dip each of the cherries in the melted chocolate. The easiest way is to hold by the stem, but you can also use a fork. Allow the excess chocolate to drip off and then place the cherry on a baking sheet lined with parchment paper.  Let the cherries sit at room temperature until the chocolate is set.

Storage

Store the leftovers in an airtight container at room temperature for up to 2 weeks. The center will liquify the longer it sits at room temperature similar to store bought chocolate covered cherries.

Place a layer of wax paper in between the layers of candy to prevent them from sticking.

It is not recommended to freeze this recipe. The filling may expand and result in cracked chocolate. The outer shell will not look as pretty.

Expert Tips

  • Cherries with stems. This makes it easier to make the recipe and it just looks pretty.
  • Salted Butter. We recommend using salted butter. It helps to make the recipe not overly sweet.
  • Good quality chocolate. Try to use a really high quality chocolate for best results. You will taste the different. Also, it will melt better and turn out smoother.
  • Dry the cherries. Make sure to remove the juice and absorb any excess moisture on the cherries before placing in the filling.
  • Refrigerate the cherries. They need to chill for about 30 minutes before coating in the melted chocolate.
  • Melt chocolate intervals. Prevent the chocolate from burning by melting in intervals. Make sure to stir after each interval as well.

Can I freeze chocolate covered cherries?

We do not recommend freezing chocolate covered strawberries. The filling will expand in the freezer. This will cause the chocolate coating to break and shatter.

Instructions

  • Drain the cherries from the jar and reserve the cherry juice from the jar.
  • Dry the cherries as much as possible using paper towels.
  • În a medium size mixing bowl, stir together 3 cups of powdered sugar, butter and ¼ cup Cherry juice.  Then gradually add in the last cup of powdered sugar until a dough forms. Refrigerate the dough for 30 minutes.
  • Roll the dough out into approximately 1 inch size balls.  Flatten out the dough balls.
  • Then fold a flatten dough ball around a cherry and roll it out with your hands to make it smooth.
  • Place the cherries on a baking sheet lined with parchment paper and refrigerate them for 30 minutes.
  • Place the chocolate and oil in a microwave safe bowl.
  • Microwave in 20 second intervals, stirring after each interval, until the chocolate is melted and smooth.
  • Then dip each of the cherries in the melted chocolate (holding them by the stems).  Allow the excess chocolate to drip off and then place the cherry on a baking sheet lined with parchment paper.  Repeat this process until all the cherries have been coated with the chocolate.
  • Let the cherries sit at room temperature until the chocolate is set (approximately 30-60 minutes).
  • Then the cherries are ready to serve and enjoy!
