- 8 oz chocolate chopped into small pieces (I like to use a premium baking bar
- 8 oz premium white chocolate chopped into small pieces
- 1/4 teaspoon peppermint extract optional
- 1/3 cup crushed candy cane pieces or peppermints divided

Line an 8×8 baking pan with wax paper and set aside.
Place 8 oz chopped dark chocolate in a microwave-safe bowl. Microwave for 30 seconds, stir well, then continue heating in 15-second intervals, stirring between each, until completely melted.
Spread the melted dark chocolate evenly into the bottom of the prepared pan. Set aside at room temperature. Do not refrigerate.
Place 8 oz chopped white chocolate in a separate microwave-safe bowl. Microwave for 30 seconds, stir well, then continue heating in 15-second intervals, stirring between each, until fully melted.
Stir 1/4 teaspoon peppermint extract into the melted white chocolate, if using. Fold 1/4 cup crushed candy cane pieces into the white chocolate until evenly distributed.
Gently spread the white chocolate mixture evenly over the dark chocolate layer.
Sprinkle the remaining crushed candy cane pieces over the top immediately.
Let the peppermint bark harden completely at room temperature for several hours before cutting or breaking into pieces.
