Chocolate Peppermint bark

Ingredients

  • 8 oz chocolate chopped into small pieces (I like to use a premium baking bar
  • 8 oz premium white chocolate chopped into small pieces
  • 1/4 teaspoon peppermint extract optional
  • 1/3 cup crushed candy cane pieces or peppermints divided

Instructions

  • Line an 8×8 baking pan with wax paper and set aside.
  • Place 8 oz chopped dark chocolate in a microwave-safe bowl. Microwave for 30 seconds, stir well, then continue heating in 15-second intervals, stirring between each, until completely melted.
  • Spread the melted dark chocolate evenly into the bottom of the prepared pan. Set aside at room temperature. Do not refrigerate.
  • Place 8 oz chopped white chocolate in a separate microwave-safe bowl. Microwave for 30 seconds, stir well, then continue heating in 15-second intervals, stirring between each, until fully melted.
  • Stir 1/4 teaspoon peppermint extract into the melted white chocolate, if using. Fold 1/4 cup crushed candy cane pieces into the white chocolate until evenly distributed.
  • Gently spread the white chocolate mixture evenly over the dark chocolate layer.
  • Sprinkle the remaining crushed candy cane pieces over the top immediately.
  • Let the peppermint bark harden completely at room temperature for several hours before cutting or breaking into pieces.
