- ½ cup salted butter
- 3 ½ cups mini marshmallows
- 1 tsp vanilla extract
- ½ cup light brown sugar
- 1 tsp ground cinnamon
- 4 cups rice cereal
- 2 tsp cinnamon sugar
- 1 cup white chocolate chips

In a large saucepan, melt the butter with the marshmallows.
Once both ingredients are completely melted, add the vanilla, brown sugar, and ground cinnamon. Stir the mixture until the ingredients are homogenous.
Gently fold the cereal into the marshmallow mixture until the cereal is evenly coated in the mixture.
Spread the rice Krispy treats into a 9x13 inch dish and sprinkle the top with the cinnamon sugar.
Melt the white chocolate in the microwave and drizzle the melted chocolate over the top of the rice Krispy treats.
Allow the rice Krispy treats to chill in the fridge for 30 minutes before cutting, serve, and enjoy!
It is best to use mini marshmallows because they melt much faster and are easier to measure out than larger marshmallows.
If you do not have cinnamon sugar, you can create your own by mixing 2 parts sugar and 1 part cinnamon.
Once the bars are sliced, you can store them in the fridge or on the counter in an airtight container for up to five days before they start to go stale.
