Cinnamon Roll Rice Krispie Treats

Just when you think rice krispie treats can’t get any better, this new recipe begs to differ. It has everything you love about classic rice krispie treat but with a twist.

Cinnamon and sugar is swirled into the ooey gooey rice krispie mixture. Everything is topped with a white chocolate drizzle for an amazing dessert.

Ingredients:

  • Salted butter
  • Mini marshmallows
  • Vanilla extract
  • Light brown sugar
  • Ground cinnamon

  • White chocolate chips

How to make cinnamon roll rice krispie treats:

  • Melt the butter and marshmallows. In a large saucepan, melt the butter. Add marshmallows and stir. Remove from heat.
  • Add the brown sugar and cinnamon. Once both ingredients are completely melted, add the vanilla, brown sugar, and ground cinnamon. Stir the mixture until the ingredients are homogenous.
  • Combine the cereal mixture. Using a large pot, gently fold the cereal into the marshmallow mixture until the cereal is evenly coated in the mixture.
  • Spread into a pan. Spread the rice Krispy treats into a 9×13 inch dish and sprinkle the top with the cinnamon sugar.
  • Prepare the glaze. Melt the white chocolate in the microwave and drizzle the melted chocolate over the top of the rice Krispy treats.
  • Refrigerate before cutting. Allow the rice Krispy treats to chill in the fridge for 30 minutes before cutting, serve, and enjoy!

How to store

Once the bars are sliced, you can store them in the fridge or on the counter in an airtight container. They will keep up to five days before they start to go stale. 

I suggest using parchment paper in between the layers.

Can you freeze?

I do not recommend freezing these rice krispie treats. The texture changes and they simply do not taste the same.

Why do my Rice Krispies get hard?

Using too high heat while cooking the mixture often results in hardened rice krispy treats. It is best to cook using medium low heat for best results.

The extra couple of minutes is worth it.

Another culprit could be pressing the mixture too hard into the pan. You want to gently press the mixture and not pack it into the pan.

Tips for the best Rice Krispie Treats:

  • It is best to use mini marshmallows because they melt much faster and are easier to measure out than larger marshmallows.
  • If you do not have cinnamon sugar, you can create your own by mixing 2 parts sugar and 1 part cinnamon.
  • You can substitute other types of cereal in this recipe. Cheerios and Chex cereal taste great.
  • Instead of a white chocolate drizzle, you can use powdered sugar and vanilla. Blend this together with milk until it is the desired consistency.
