Ingredients

Ingredients for cinnamon roll rice krispie treats - salted butter, mini marshmallows, vanilla, brown sugar, cinnamon, rice krispies cereal, cinnamon sugar, white chocolate chiops.
  • Salted butter. I prefer salted butter in this recipe.
  • Mini marshmallows. The mini size melts quicker.
  • Vanilla extract. Pure vanilla is best.
  • Light brown sugar. Try Homemade Brown Sugar Recipe.
  • Ground cinnamon. Feel free to adjust this to taste.
  • Rice Krispies Cereal. Make sure the cereal is fresh.
  • Cinnamon sugar. This mixture makes the rice krispies so decadent.
  • White chocolate chips. Use good quality chocolate.

How to Make Cinnamon Roll Rice Krispie Treats

Step 1. In a large saucepan, melt the butter. Then add the marshmallows and stir. Next, remove from the heat.

Brown sugar and cinnamon mixed into butter.

Step 2. Add the brown sugar and cinnamon to the melted marshmallows and butter.

Step 3. Combine the cereal mixture. Gently fold the cereal into the marshmallow mixture until evenly coated.

Step 4. Spread the rice Krispy treats into the baking dish. Sprinkle the top with the cinnamon sugar.

Step 5. Prepare the glaze. Melt the white chocolate in the microwave and drizzle the melted chocolate over the top of the rice Krispy treats.

Step 6. Allow the rice Krispy treats to chill in the fridge for 30 minutes. Then cut and serve.

Storage

Once the bars are sliced, you can store them in the fridge or on the counter in an airtight container. They will keep up to five days before they start to go stale. 

I suggest using parchment paper in between the layers.

Can you freeze?

I do not recommend freezing these rice krispie treats. The texture changes and they simply do not taste the same.

Why do my Rice Krispies get hard?

Using too high heat while cooking the mixture often results in hardened rice krispy treats. It is best to cook using medium low heat for best results.

The extra couple of minutes is worth it.

Another culprit could be pressing the mixture too hard into the pan. You want to gently press the mixture and not pack it into the pan.

Expert Tips

  • It is best to use mini marshmallows because they melt much faster and are easier to measure out than larger marshmallows.
  • If you do not have cinnamon sugar, you can create your own by mixing 2 parts sugar and 1 part cinnamon.
  • You can substitute other types of cereal in this recipe. Cheerios and Chex cereal taste great.
  • Instead of a white chocolate drizzle, you can use powdered sugar and vanilla. Blend this together with milk until it is the desired consistency.

Instructions

  • In a large saucepan, melt the butter with the marshmallows.
  • Once both ingredients are completely melted, add the vanilla, brown sugar, and ground cinnamon. Stir the mixture until the ingredients are homogenous.
  • Gently fold the cereal into the marshmallow mixture until the cereal is evenly coated in the mixture.
  • Spread the rice Krispy treats into a 9×13 inch dish and sprinkle the top with the cinnamon sugar.
  • Melt the white chocolate in the microwave and drizzle the melted chocolate over the top of the rice Krispy treats.
  • Allow the rice Krispy treats to chill in the fridge for 30 minutes before cutting, serve, and enjoy!
