- 4 Overripe Bananas
- Vegetable Oil for Frying
- 1 1/2 cups Pancake Mix
- 1 Egg
- 1 cup Milk
- 2 tsp Vegetable Oil plus more for Frying
- 1/2 cup Powdered Sugar
Get Recipe Ingredients
Heat 3 inches of vegetable oil in a large pot or dutch oven to approximately 350-375 degrees F.
Slice the bananas into approximately 1 inch thick slices.
Then gently mix together the pancake mix, egg, milk and 2 teaspoons of the vegetable oil in a large bowl.
Gently press the banana slices into the batter until coated and then place them in the oil. Cook for 3-4 minutes, turning them halfway through the cook time to brown both sides.
Use a slotted spoon to move the bananas from the oil to a plate lined with paper towels. Be careful not to overcrowd the pan. You will likely have to work in batches.
Repeat this process until all the bananas have been fried.
Sift the powdered sugar on top and they are ready to serve and enjoy!
These are best served warm topped with powdered sugar, syrup, caramel sauce or chocolate sauce.
We prefer these fresh but you can store any leftovers in an airtight container in the refrigerator for up to 5 days. They will get softer once they are stored.
