Deep Fried Peach Cobbler

Ingredients

  • 1 can Peaches in Syrup 15 ounces
  • 1 cup Brown Sugar
  • 2 teaspoons Ground Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Allspice
  • 1/2 cup Butter divided
  • 1/2 cup Olive Oil
  • 1 can Flakey Layered Biscuits 8 count
  • Powdered Sugar for serving
  • Ice Cream for serving

Instructions

  • Melt 1/4 cup of butter in a cast iron skillet over medium high heat.
  • Whisk in the juices from the canned peaches, brown sugar, cinnamon, nutmeg and allspice to the pan.  Bring the mixture to a low boil, stirring constantly.
  • Then stir in the peaches.  Cook for 5-8 minutes until the sauce begins to thicken.  Watch them closely as they cook, so that the peaches do not get too soft.
  • Remove from heat and let the peaches and sauce cool slightly.
  • In a separate skillet, melt the remaining butter and add in the olive oil.
  • Pull each of the biscuits apart.
  • Place the biscuits in the skillet.  Cook each side for 2-3 minutes until they are browned.
  • Remove them from the skillet to a plate lined with a paper towel to soak up the excess oil.
  • Top the biscuits with powdered sugar.
  • When serving, layer the biscuits and peaches with the sauce on a serving bowl or plate.  Top with ice cream and enjoy!
