Easter Cake Mix Cookies

Ingredients

  • 1 yellow cake mix
  • 2 eggs
  • 1/3 cup oil
  • 1/2 cup Pastel M&Ms

Instructions

  • Preheat the oven to 350°F. Line baking sheets with parchment paper or lightly grease them.
  • In a large mixing bowl, combine 1 box yellow cake mix, 2 eggs, and 1/3 cup vegetable oil. Mix until a thick dough forms.
  • Using a medium cookie scoop, scoop the dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  • Press 1/2 cup pastel M&M's evenly onto the tops of the cookie dough, gently pressing the candies into the dough.
  • Bake for 8 to 10 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely before serving.

We love making these with a yellow cake mix, but these can also be made with a vanilla or chocolate cake mix as well.
