Easter Egg Fruit Pizza

Ingredients

  • 1 pkg Sugar Cookie Dough 16.5 oz package
  • 8 ounces Cream Cheese softened
  • 6 Tablespoons Butter softened
  • 2 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • Colorful Fruit strawberries, blueberries, kiwis, mandarin oranges, raspberries, etc.

Instructions

  • Roll out the sugar cookie dough into a large egg shape on a cookie sheet (trim if needed).  Then bake the cookie based on the package instructions until golden brown.  Then let the cookie cool completely at room temperature.
  • With a hand held mixer or stand up mixer, beat together the cream cheese and butter until light and fluffy.  Then add in the powdered sugar.  Continue to mix until well combined.  Then add in the vanilla extract and mix until combined.
  • Spread the cream cheese frosting on top of the cooled cookie.  Then decorate the egg with the colorful fruit.  Serve and enjoy!

Notes

You can make this recipe with homemade sugar cookie dough if you prefer. 
I love using fresh fruit for this recipe instead of canned.  If you do use any canned fruit, make sure to drain it well before adding it to the cookie. 
Cover and refrigerate any leftovers for up to 3-4 days.
