Fruit Pizza

Fruit Pizza has a delicious sugar cookie crust layered with cream cheese frosting. It's topped with fresh fruit for a gorgeous dessert for any occasion.

Ingredients

For the Sugar Cookie Crust:

  • Prepared Sugar Cookie Dough 16 oz (I used Pillsbury)

For the Frosting:

  • 10 oz Cream Cheese
  • 1/4 Cup Butter
  • 1 teaspoon Vanilla Extract
  • 1 1/2 Cups Powdered Sugar

For the Fruit Toppings:

  • 3-4 Cups Fresh Fruit I used pineapple, strawberries, blueberries, kiwi and raspberries but you can use what you prefer.

Instructions

  • Preheat the oven to 350 degrees F. Prepare a 12" pizza pan with nonstick cooking spray.
  • Press the sugar cookie dough evenly into the pizza pan leaving some space around the edge of the pan.
  • Bake for 8-10 minutes. The center will be soft but as it cools, it will continue to set.
  • Allow the sugar cookie crust to cool completely at room temperature.
  • While the cookie crust cools, make the frosting.
  • Use an electric mixer to combine the cream cheese, butter, powdered sugar and vanilla until well combined. The texture should be light and fluffy.
  • Once the cookie has completely cooled, spread the frosting evenly over the crust.
  • Top with the fruit. You can create a design or scatter the fruit on top.
  • Slice with a pizza cutter, then it’s ready to serve and enjoy!

Notes

Crust: I made the crust on this recipe twice. The first time I baked the crust for 15 minutes and it was crispy similar to thin crust pizza. I made it a second time and baked it for 8 minutes and it was softer and I preferred the softer crust over the crispy crust.  Oven times vary so check the crust after 8 minutes and continue checking until the edges are set and if you prefer a crispier crust, cook for 15 minutes.  
Cover any leftovers with plastic wrap and refrigerate for up to 2-3 days. Any longer, and the juice from the fruit will make the fruit pizza soggy. It is best served within 12 hours of making it.
