Preheat the oven to 350 degrees F. Prepare a 12" pizza pan with nonstick cooking spray.
Press the sugar cookie dough evenly into the pizza pan leaving some space around the edge of the pan.
Bake for 8-10 minutes. The center will be soft but as it cools, it will continue to set.
Allow the sugar cookie crust to cool completely at room temperature.
While the cookie crust cools, make the frosting.
Use an electric mixer to combine the cream cheese, butter, powdered sugar and vanilla until well combined. The texture should be light and fluffy.
Once the cookie has completely cooled, spread the frosting evenly over the crust.
Top with the fruit. You can create a design or scatter the fruit on top.
Slice with a pizza cutter, then it’s ready to serve and enjoy!
