Fruity Pebbles Cupcakes

These sweet and colorful Fruity Pebbles Cupcakes make a great treat for birthday parties. The buttercream frosting is flavored with crushed fruity pebbles cereal and tastes amazing. Kids will go crazy over these fun and flavor packed treats.

Ingredients

For the Cupcakes:

  • 1 pkg White Cake Mix 16 ounces
  • 1 cup Water
  • 1/2 cup Vegetable Oil
  • 3 Large Eggs
  • 1 cup Fruity Pebbles Cereal

For the Frosting:

  • 3/4 cup Unsalted Butter softened
  • 2 1/4 cup Powdered Sugar
  • 2 Tbsp Milk
  • 1 tsp Clear Vanilla Extract
  • 1/2 cup Fruity Pebbles Cereal finely crushed

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and line 2 cupcake pans with liners.
  • In a large mix bowl, stir together the cake mix, water, vegetable oil and eggs.
  • Then use a spatula to gently mix in Fruity Pebbles Cereal.
  • Pour the batter into the cupcake liners, filling them approximately 3/4 full.
  • Bake for 18-21 minutes until a toothpick inserted into the cupcakes comes out clean.
  • Cool completely on wire racks.
  • For the Frosting:
  • Cream together the butter and powdered sugar until combined and smooth.
  • Add in the milk and vanilla extract and mix for 1-2 minutes until the frosting is light and fluffy.
  • Crush 1/2 cup of fruity pebbles by placing it in a food processor and blending until they are finely crushed.
  • Then gently stir into the frosting.
  • Pipe the frosting onto each of the cupcakes with a star tip.
  • Sprinkle Fruity Pebble Cereal on top and then they are ready to serve and enjoy!

Notes

Store the leftovers in an airtight container for up to 1 week. 
Make sure to crush the cereal before mixing it into the frosting as it will not go through the piping bag without being crushed first.
