Fruity Pebbles Cupcakes starts with a cake mix but no one will guess with all the extra flavors. Fruity Pebbles cereal is added into the cake mix and the decadent frosting.

The combination is a burst of flavor and gorgeous colors. I have been making homemade cupcake recipes since the kids were little. This is definitely a favorite. This cereal is so much fun to use and I also make Fruity Pebbles Rice Crispy Treats and Fruity Pebbles Cheesecake.

Ingredients

  • White Cake Mix
  • Large Eggs 
  • Fruity Pebbles Cereal 

Fruity pebbles frosting

  • Unsalted Butter, softened at room temperature
  • Powdered Sugar
  • Fruity Pebbles Cereal (finely crushed)

Recipe variations

  • Cake mix options. Other flavors to try include yellow, vanilla, strawberry and funfetti.
  • Sheet Cake. Instead of cupcakes, this can easily be baked as a sheet cake in a 9×13 pan. Top with frosting and garnish with cereal as normal. This is another fun option.
  • Mini Cupcakes. Use a mini cupcake pan and liners to make adorable mini cupcakes. This is great when you need a bite size treat. You may need to adjust the cooking time.
  • Fruity Pebbles Cereal. Feel free to use the name brand or generic brand of cereal in this recipe.
  • Applesauce. If you need to reduce the fat in this recipe and make it a little healthier, substitute applesauce for the oil.

How to make fruity pebbles cupcakes

  • Step 1. Preheat the oven and prepare the pans. Preheat the oven to 350 degrees Fahrenheit and line 2 cupcake pans with liners.

Step 2. Combine the cake mix ingredient in a large mix bowl. Stir together the cake mix, water, vegetable oil and eggs.

Step 3. Carefully add the cereal.

Step 4. Fill the cupcake liners with batter about ¾ full. Bake the cupcakes for about 18 minutes or until a toothpick inserted comes out clean.

Step 5. While the cupcakes are cooking, make the frosting. Combine the butter and powdered sugar until combined and smooth.

Step 6. Add the milk and combine until the frosting is light and fluffy.

Step 7. Finally, crush the fruity pebbles by placing it in a food processor. Then gently stir into the frosting. Decorate the cupcakes and enjoy.

How to store?

Store the leftovers in an airtight container for up to 1 week. If preparing in advance, wait to garnish with cereal until ready to serve.

Can you freeze the cupcakes?

The cupcakes can be frozen up to 3 months if you need to make these in advance. However, I would wait to frost until ready to serve.

Allow to thaw overnight in the fridge and come to room temperature. Then frost as normal. This is perfect for birthday parties and special occasions when you need extra time.

Tips and Tricks

  • Crush the cereal finely. Make sure to crush the cereal before mixing it into the frosting as it will not go through the piping bag without being crushed first.
  • Don’t overfill the liners. Be careful that you do not overfill the cupcake liners or you will have a big mess.
  • Gently fold in the cereal. Don’t use an electric mixer to combine the cereal. Gently fold in the cereal by hand to combine the ingredients together.
  • Allow to cool. Make sure the cupcakes have cooled completely before frosting.
  • Clear Vanilla Extract. It is best to use clear vanilla extract. This will give the frosting the brightest hue.

  • 2 Tbsp Milk
  • 1 tsp Clear Vanilla Extract
  • 1/2 cup Fruity Pebbles Cereal finely crushed

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and line 2 cupcake pans with liners.
  • In a large mix bowl, stir together the cake mix, water, vegetable oil and eggs.
  • Then use a spatula to gently mix in Fruity Pebbles Cereal.
  • Pour the batter into the cupcake liners, filling them approximately ¾ full.
  • Bake for 18-21 minutes until a toothpick inserted into the cupcakes comes out clean.
  • Cool completely on wire racks.
  • For the Frosting:
  • Cream together the butter and powdered sugar until combined and smooth.
  • Add in the milk and vanilla extract and mix for 1-2 minutes until the frosting is light and fluffy.
  • Crush ½ cup of fruity pebbles by placing it in a food processor and blending until they are finely crushed.
  • Then gently stir into the frosting.
  • Pipe the frosting onto each of the cupcakes with a star tip.
  • Sprinkle Fruity Pebble Cereal on top and then they are ready to serve and enjoy!
