- 1 cup Swerve Granulated Sugar
- 1 tsp vanilla extract
- 1 egg

Preheat the oven to 350°F. Line a baking sheet with parchment paper or lightly grease the baking sheet.
In a large mixing bowl, combine 1 cup peanut butter, 1 cup Swerve Granulated Sweetener, 1 teaspoon vanilla extract, and 1 egg. Stir until a smooth dough forms.
Use a cookie scoop or tablespoon to portion the dough into balls and place them on the prepared baking sheet about 2 inches apart.
Press the tines of a fork into the top of each cookie, then press again in the opposite direction to create a crisscross pattern.
Bake for 9 to 11 minutes, or until the cookies are lightly golden around the edges.
