Ingredients

  • 1 cup Peanut Butter
  • 1 cup Swerve Granulated Sugar
  • 1 tsp vanilla extract
  • 1 egg

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper or lightly grease the baking sheet.
  • In a large mixing bowl, combine 1 cup peanut butter, 1 cup Swerve Granulated Sweetener, 1 teaspoon vanilla extract, and 1 egg. Stir until a smooth dough forms.
  • Use a cookie scoop or tablespoon to portion the dough into balls and place them on the prepared baking sheet about 2 inches apart.
  • Press the tines of a fork into the top of each cookie, then press again in the opposite direction to create a crisscross pattern.
  • Bake for 9 to 11 minutes, or until the cookies are lightly golden around the edges.
  • Allow the cookies to cool on the baking sheet for 10 to 15 minutes before transferring them to a wire rack to cool completely.
