Maple Butter Blondies

Ingredients

For the Blondies:

  • 1/2 cup unsalted Butter melted
  • 1 cup Brown Sugar
  • 1 Large Egg
  • 2 tsp Vanilla Extract
  • 1 cup All Purpose Flour
  • 1/4 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 1/2 cup Butterscotch Chips

For the Maple Butter Sauce:

  • 1/2 cup Real Maple Syrup
  • 1/2 cup Butter
  • 3/4 cup Brown Sugar
  • 8 ounces Cream Cheese softened

For Serving:

  • Butter Pecan Ice Cream

Instructions

For the Blondies:

  • Preheat the oven to 350 degrees Fahrenheit and spray an 8X8 baking pan with nonstick spray or parchment paper.
  • Beat together the butter and sugar in a large mixing bowl until smooth. Add in the eggs and vanilla extract.  Mix until well combined.
  • In a separate bowl, stir together the flour, baking powder, baking soda and salt.
  • Then stir in the flour mixture into the butter/sugar mixture by hand until just combined.  Do not over mix.
  • Then gently stir in the butterscotch chips.
  • Spread the batter into the pan and bake for 25-30 minutes until a toothpick inserted into the center comes out clean.
  • Let the blondies cool slightly.

For the Maple Butter Sauce:

  • In a medium saucepan, stir together the butter, syrup, brown sugar and cream cheese.
  • Heat on medium low heat and stir until melted, smooth and combined.
  • Simmer on low for 10-15 minutes, stirring the mixture frequently.
  • Cut the brownies into squares while they are still warm.  Serve the blondies topped with the maple butter sauce and butter pecan ice cream (if you prefer).
  • Enjoy!
