Margarita Poke Cake

Ingredients

  • 1 box White Cake Mix
  • *Ingredients to make the cake based on the package instructions
  • Non Alcoholic Margarita Mix
  • 4 Tbsp Tequila divided
  • 2 Limes zested, divided
  • 1 can Sweetened Condensed Milk 14 oz
  • 1 Lime juiced
  • 8 oz Whipped Topping
  • 1 Lime cut into wedges (for topping)

Instructions

  • Prepare the cake mix based on the package instructions but use the margarita mix instead of water in the cake mix and add in 2 Tbsp of Tequila and 1 of lime zest to the cake batter. Pour into a prepared 9X13 baking pan and bake based on the package instructions.
  • Let the cake cool and then poke holes throughout the cake using the round end of a wooden spoon.
  • Then in a mixing bowl, whisk together then sweetened condensed with 1 tbsp of tequila and then lime juice. This pour this mixture evenly into the holes of the cake.
  • Cover and refrigerate the cake overnight.
  • Then mix the whipped topping with 1/4 cup of the margarita mix. Spread this topping on top of the cake. Top with the remaining lime zest and lime wedges. Enjoy!

*Refrigerate any leftovers of the cake covered for up to 5 days.
