What is a poke cake?
After baking, the cake is “poked” with a fork or the end of a wooden spoon. There should be holes all over the cake. This allows the remaining ingredients to be poured into the holes.
This results in a perfectly delicious moist cake.
Ingredients

- White Cake Mix. Plus, the Ingredients to make the cake based on the package instructions.
- Non Alcoholic Margarita Mix. Make sure to grab the mix that does not include alcohol.
- Sweetened Condensed Milk. Don’t substitute for regular milk as this gives the delicious cake the perfect texture.
- Lime. Fresh lime juice is recommended.
- Whipped Topping. Try using store bought or Homemade Whipped Cream Recipe.

Variations
- Pudding. Try using pudding mixes with the sweetened condensed milk. Instant pudding blends perfectly with this to pour on the cake. Vanilla pudding is delicious paired with a box vanilla cake mix.
- Tequila. You can adjust the amount for your liking or even omit it entirely.
- Cake flavors. Try using Lemon for a tasty lemon lime combination. Strawberry is tasty too with the Lime.
- Food Coloring. Add a few drops of green food coloring to the batter.
How to Make Margarita Poke Cake

Step 1. Make the cake. Use a large bowl to prepare the cake mix based on the package instructions. However, use the margarita mix instead of water in the cake mix. Then add in Tequila and lime zest to the cake batter.

Step 2. Bake the cake. Pour batter into a prepared 9X13 baking pan and bake based on the box instructions.

Step 3. Allow to cool. Let the cake cool and then poke holes throughout the cake using the round end of a wooden spoon.

Step 4. Then in a mixing bowl, whisk together then sweetened condensed with tequila and then lime juice. Pour the batter evenly into the holes of the cake. Refrigerate the cake. Cover and refrigerate the cake overnight.

Step 5. Make the topping. Combine the whipped topping with the margarita mix. Spread this topping on top of the cake. Garnish with the remaining lime zest and lime wedges.

Step 6. Slice and enjoy.

Storage
Cover the cake with plastic wrap or a lid and refrigerate. This will ensure it stays fresh. Stored properly, it will last up to 5 days.

- 4 Tbsp Tequila divided
- 2 Limes zested, divided
- 1 can Sweetened Condensed Milk 14 oz
- 1 Lime juiced
- 8 oz Whipped Topping
- 1 Lime cut into wedges (for topping)

I will make this and put lime Jello in with the cake ingredients. I would prefer a cream cheese tequila frosting. Will that work?
Hey Lisa – I haven’t tested that yet but I think it would work great. I would start with our Cream Cheese Frosting Recipe and slowly add in Blanco or Silver Tequila 1 teaspoon at a time until you can slightly taste it in the frosting. Let me know how it turns out!
