Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1 cup unsalted roasted peanuts
  • 1/4 tsp salt
  • 1 Tbsp butter
  • 1 tsp vanilla extract
  • 1 tsp baking soda

Instructions

  • Generously butter a cookie sheet and set aside. In a 2-quart glass mixing bowl, stir together 1 cup granulated sugar and 1/2 cup light corn syrup. Microwave on HIGH for 4 minutes.
  • Carefully stir in 1 cup unsalted roasted peanuts and 1/4 teaspoon salt. Microwave on HIGH for 3 ½ minutes.
  • Stir in 1 tablespoon butter and 1 teaspoon vanilla extract until the butter is melted. Microwave on HIGH for 1 ½ minutes, watching for a golden brown color.
  • Quickly stir in 1 teaspoon baking soda (the mixture will become light and foamy). Immediately pour onto the prepared cookie sheet and gently spread out without overworking it.
  • Let cool completely at room temperature, then break into pieces.
