- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1 cup unsalted roasted peanuts
- 1/4 tsp salt
- 1 Tbsp butter
- 1 tsp vanilla extract
- 1 tsp baking soda

Generously butter a cookie sheet and set aside. In a 2-quart glass mixing bowl, stir together 1 cup granulated sugar and 1/2 cup light corn syrup. Microwave on HIGH for 4 minutes.
Carefully stir in 1 cup unsalted roasted peanuts and 1/4 teaspoon salt. Microwave on HIGH for 3 ½ minutes.
Stir in 1 tablespoon butter and 1 teaspoon vanilla extract until the butter is melted. Microwave on HIGH for 1 ½ minutes, watching for a golden brown color.
Quickly stir in 1 teaspoon baking soda (the mixture will become light and foamy). Immediately pour onto the prepared cookie sheet and gently spread out without overworking it.
Let cool completely at room temperature, then break into pieces.
