Bite size treats are so fun to eat, and this Mini Brownie Cupcakes recipe is super easy to make. Each bite is so decadent and loaded with chocolate flavor for an amazing mini brownie.
Preheat oven to 350°F and spray a mini muffin pan with nonstick spray.
In a bowl, mix 1/2 cup melted butter, 1 cup white sugar, 2 eggs, and 1 teaspoon vanilla extract until combined. Stir in 1/3 cup unsweetened cocoa powder, 1/2 cup all-purpose flour, 1/4 teaspoon salt, and 1/4 teaspoon baking powder until smooth.
Spoon about 1 tablespoon of batter into each mini muffin cup (makes about 20 mini muffins).
Bake for 8–10 minutes.
Allow to cool, then optionally sprinkle with powdered sugar before serving.
Notes
You could easily add nuts to this brownie recipe if your family likes. Or if you are making a hot fudge sundae, just sprinkle a few on top!
