Ingredients

  • 1/2 cup butter melted
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Instructions

  • Preheat oven to 350°F and spray a mini muffin pan with nonstick spray.
  • In a bowl, mix 1/2 cup melted butter, 1 cup white sugar, 2 eggs, and 1 teaspoon vanilla extract until combined. Stir in 1/3 cup unsweetened cocoa powder, 1/2 cup all-purpose flour, 1/4 teaspoon salt, and 1/4 teaspoon baking powder until smooth.
  • Spoon about 1 tablespoon of batter into each mini muffin cup (makes about 20 mini muffins).
  • Bake for 8–10 minutes.
  • Allow to cool, then optionally sprinkle with powdered sugar before serving.

Notes

You could easily add nuts to this brownie recipe if your family likes. Or if you are making a hot fudge sundae, just sprinkle a few on top!
