Mint Chocolate Brownies

Mint Chocolate Brownies are so decadent with a luscious mint layer. These mint brownies are topped with chocolate and crushed Andes Mints. Each bite is rich and amazing.

Ingredients

For the Brownies:

  • 1 box Brownie Mix
  • *Ingredients to prepare the brownies based on the package instructions

For the Mint Layer:

  • 3 Tablespoons unsalted Butter softened
  • 1 1/2 cups Powdered Sugar
  • 1 1/2 Tablespoons Milk
  • 1 teaspoon Peppermint Extract
  • 2 drops Green Food Coloring

For the Chocolate Layer:

  • 1 cup Semi-Sweet Chocolate Chips
  • 1/2 cup Unsalted Butter
  • Crushed Andes Mints optional

Instructions

  • Bake the brownies based on the package instructions in an 8X8 or 9X9 pan lined with parchment paper with the paper overhanging the sides of the pan.
  • While the brownies are baking, prepare the mint layer.  In a large bowl, mix together the butter, powdered sugar, milk and peppermint extract until light and fluffy.  Gently stir in the food coloring.
  • When the brownies are done baking, let them cool completely at room temperature.  Then spread the mint layer on top of the brownies.
  • Prepare the chocolate layer.  Melt the butter and chocolate chips in a microwave safe bowl.  Heat in 20 second intervals, stirring after each interval, until fully melted and smooth.
  • Pour the melted chocolate evenly over the mint layer on the brownies and top with he mints if using.
  • Let the brownies sit at room temperature until the chocolate is set.
  • Once set, carefully remove the brownies from the pan.  Cut into small squares and they are ready to serve and enjoy!

Notes

You can use dark chocolate chips or milk chocolate chips in this recipe if you prefer. 
Refrigerate the leftover brownies in a covered dish for up to 5-7 days.  
Make sure that you use a brownie mix that includes instructions on how to make the brownies in an 8X8 or 9X9 pan.
